Oatmeal with strawberries couldn’t be easier to make with wholesome, simple ingredients. Here’s everything you’ll need to make this recipe:

  • Rolled oats: Using old-fashioned rolled oats for this recipe will give you that perfect chewy texture. I love One Degree Sprouted Gluten Free Oats.
  • Vanilla protein: My favorite protein powder is Equip Foods. It’s great quality, amino acid profile, texture and the best natural vanilla flavor. Other protein powders that would work include whey, beef isolate or bone broth protein for good quality. Pea or brown rice protein is not recommended and will make it gritty.
  • Chia seeds: These will help to thicken up the oats and give them more volume. They also add healthy fats, fiber, and protein.
  • Salt: Just a small amount to enhance the flavors!
  • Greek yogurt: Adds so much creaminess! Use Greek yogurt for an extra protein boost or plant-based yogurt to keep this recipe vegan and dairy free.

  2. Add wet ingredients: Add the plain Greek yogurt and preferred milk to the oat mixture. Stir until all ingredients are well combined and there are no lumps.
  3. Optional to roast strawberries: Roast the strawberries for a saucy ribbon of rich strawberry flavor. Preheat the oven to 400 degrees F. Add sliced strawberries to a small pan and roast for 20-30 minutes until soft and jammy.
  4. Assemble: In two separate jars or bowls, start by layering about ½ cup of the oat mixture followed by a layer of sliced strawberries. Repeat the layers between 2 jars until all the oat mixture and strawberries are used, ensuring strawberries are evenly distributed.
  5. Chill and soak: Cover the jars or containers with lids or plastic wrap and refrigerate overnight, or for at least 4-6 hours, to allow the oats to soak and soften.

Substitutions/Variations:

There are lots of ways to make these overnight oats your own! Here are a few suggestions:

  • Change the fruit: If you don’t have strawberries on hand, try using the same amount of any other fruit. Blueberries, cherries, raspberries, blackberries would all be delicious!
  • Make it dairy free: Use dairy-free yogurt and almond or coconut milk for a dairy-free, vegan overnight oats. Keep in mind, the protein won’t be as high using dairy-free yogurt varieties.
  • Extra flavorings: To add extra flavor and a bit of a different taste, try adding in about 1/2 to 1 tsp of vanilla and/or ground cinnamon.
  • Toppings: Give these even more texture by adding toppings like unsweetened coconut flakes, extra fruit, almond butter, chopped nuts, mini chocolate chips, and/or granola.

 

Tips / FAQ:

  • Type of oats: We recommend rolled oats for the perfect consistency. You can use quick oats, but they will have a softer, mushier consistency. Steel-cut oats will not work for this recipe, as they will not soften and have a much chewier texture.
  • Roast the strawberries: It’s an additional step, but the strawberry flavor is even deeper when you roast some or all of the fruit. Highly recommend!
  • Make it gluten free: Rolled oats are naturally gluten free; however, to ensure your oats have not been contaminated by gluten in a factory, buy a brand that is labeled certified gluten free.
  • Make it sweeter: If you’d like to make your overnight oats a bit sweeter, feel free to add in 1-2 tablespoons of maple syrup, honey or another sweetener of your choice. Depending on your protein powder, there may already be sweetener, so skip added sweetener for a more blood sugar friendly oats.
  • Warm oatmeal: You can actually serve these overnight oats warmed up, too! Heat them in the microwave or stovetop for 30 seconds to a minute or two, depending on how warm you’d like them. Once heated, stir and add a bit more milk, as needed.

 

Storing:

Overnight oats can be stored in the refrigerator for up to 3-4 days. Simply give them a stir before serving.
