This Caesar steak salad recipe combines tender steak, fresh greens, crisp radishes, and a creamy avocado Caesar dressing for a satisfying, flavorful meal! Here’s everything you’ll need to make it:

For the Salad:

  • Flank Steak – Tender and flavorful, perfect for slicing over a salad.
  • Romaine or Little Gem Lettuce – Crisp and refreshing greens for the base.
  • Arugula – Adds a peppery bite to balance the flavors.
  • Radish – Thinly sliced for a fresh, slightly spicy crunch.
  • Parmesan – Enhances the flavor with rich saltiness.

For the Avocado Caesar Dressing:

  • Avocado – Creates a creamy, nutrient-rich base for the dressing.
  • Lemon Juice – Adds brightness and a touch of acidity.
  • Water – Helps achieve the perfect dressing consistency.
  • Anchovies – Classic Caesar dressing ingredient for deep umami flavor.
  • Olive Oil – Adds richness and smoothness.

For the White Bean “Croutons” (Optional):

  • White Beans – A protein and fiber-rich alternative to traditional croutons.

Nutritional highlights

  • Protein-Packed – Flank steak and white beans provide a great source of protein for muscle support and satiety.
  • Heart-Healthy Fats – Avocado, anchovies and olive oil contribute beneficial healthy fats.
  • Rich in Fiber – Arugula, romaine, avocado and white beans add fiber for digestive health.
  • Vitamin-Packed – Radishes, lemon juice, and greens provide essential vitamins like C, K, and folate.
  • Lower Carb Option – This arugula steak salad is a nutrient-dense meal without heavy carbs, making it great for balanced eating.

Recipe steps

  1. Make the White Bean Croutons – If making, start the white bean ‘croutons’: Heat your oven to 350. Drain the white beans and place them in a medium bowl. Drizzle with 1 tablespoon of olive oil, arrowroot and a pinch of salt and pepper then toss to coat evenly. Pour onto a baking sheet and bake for 20-25 minutes, or until golden brown and crispy.
  2. Cook the Steak – Season the flank steak with salt and black pepper and set aside. Heat a grill or skillet over medium-high heat and cook steak for 4–5 minutes per side for medium-rare, or to desired doneness.  Let rest for 5 minutes, then slice thinly against the grain.
  3. Mix the Dressing – In a blender or food processor, make the avocado caesar dressing by combining the avocado, lemon juice, water, anchovies, olive oil, Dijon mustard, salt, black pepper, and Parmesan. Blend until smooth, adding more water if needed to reach a creamy consistency.
  4. Toss Salad with Dressing – In a large bowl, toss the romaine, arugula, and sliced radishes. Drizzle with the avocado caesar dressing and toss to coat.
  5. Assemble & Serve – Top the salad with sliced steak, crispy white beans, and a sprinkle of Parmesan. Serve immediately and enjoy.

Substitutions/Variations

  • Protein Alternatives – Swap flank steak for grilled chicken, shrimp, salmon, or even tofu for a vegetarian option.
  • Lettuce Options – Use kale, spinach, or butter lettuce instead of romaine and arugula.
  • Dressing Tweaks – Skip the anchovies for a vegetarian version.
  • Cheese Swaps – Try Pecorino Romano or nutritional yeast for a dairy-free alternative.
  • Crouton Alternatives – Replace white bean “croutons” with traditional croutons, roasted chickpeas, or chopped nuts for crunch.

Tips/FAQs

  • What are alternate types of steak to use? You can swap flank steak for ribeye, skirt steak, sirloin, filet mignon, or even grilled tri-tip for a different texture and flavor.
  • What is the best gluten free croutons recipe? A great gluten-free crouton option is using cubed gluten-free bread tossed with olive oil, garlic powder, salt, and pepper, then baked at 375°F (190°C) for about 10-15 minutes until crispy. For extra flavor, add Italian seasoning or grated Parmesan.
  • Can I turn this into a wrap? Absolutely! Fill your favorite gluten-free wrap (I love these gluten free wraps) with the salad, steak, and avocado Caesar dressing for a delicious and portable meal.
  • Can I make this salad ahead of time? Yes! You can prep the dressing, chop the lettuce, and slice the veggies in advance. Store them separately and assemble the salad just before serving. If making ahead, store the steak separately and slice it fresh to maintain its juiciness.

Storing leftover salad

Once the steak caesar salad is tossed together, it’s best eaten fresh and within a couple of hours. Here’s some tips for longer storage:

  • Salad & Vegetables – Store chopped lettuce and veggies separately in an airtight container in the fridge for up to 2 days. Keep them dry to prevent wilting.
  • Steak – Store cooked steak in an airtight container for up to 3 days. Reheat gently in a skillet or enjoy cold.
  • Dressing – Keep the avocado Caesar dressing in a sealed jar in the fridge for up to 3 days. Add a little water or lemon juice if it thickens too much.
  • Croutons – If using white bean “croutons,” store them in an airtight container at room temperature for up to 2 days to keep them crispy.
