Ingredients
- 1 tablespoons fresh rosemary
- 1 teaspoon granulated onion
- 1 teaspoon granulated garlic
- 1 teaspoon fresh crashed pepper
- 3/4 teaspoon sea salt
- 1 lb ground bison
- 1/3 cup sifted almond flour
- 1 egg
- 1 tablespoon extra virgin olive oil
- 24 oz marinara sauce
Instructions
- Heat the oven to 350 degrees.
- In a large mixing bowl, combine the fresh rosemary, granulated onion, garlic, black pepper and salt and stir to mix it together. Add in the ground bison and mix to combine.
- Add in the almond flour and egg and gently mix until just combined. Do not overmix or the meatballs will be tough.
- Use your hands to shape the mixture into meatballs, about 3 tablespoons each, or a bit larger than a golf ball.
- Place a large oven safe saute pan over medium high heat. Add the meatballs to the pan keeping them 2 inches apart. Sear the meatballs until browned on one side, about 3-5 minutes, then flip to sear the other side for another 3-5 minutes.
- Once the meatballs are browned pour the marinara sauce over the meatballs and put the pan in the oven, cooking for 8-10 minutes to cook through.
- Serve the meatballs over spaghetti squash, pasta or alongside vegetables your favorite roast vegetables like broccoli or potatoes.
Notes
- For the meat, you can choose bison, beef, or lamb.
- To make it gluten-free, swap breadcrumbs with almond flour.
- You can opt for fresh garlic or onions instead of the granulated ones.
- If you lack dried rosemary, fresh thyme can work as a substitute herb.
- Spinach or any other green that you like can be added for extra flavor.
