This bison meatball recipe is easy, fast, and delicious.

Bison meatballs are unique because they are leaner and richer in protein than beef meatballs and have a mild and slightly sweet flavor. It also contains more iron, zinc, and vitamin B12 than beef. 

Fresh rosemary adds a fragrant and herbal touch to the meatballs and some health benefits. Rosemary is rich in antioxidants, anti-inflammatory compounds, and iron.

This recipe is also gluten-free and uses minimal ingredients, making it a healthy choice for anyone. You only need to sear the meatballs in a skillet and bake them in the oven until they are cooked.

 

Meatball Ingredients

Ground bison: This meat is the main ingredient and it is a healthy and lean choice. It is slightly lower in fat and calories than beef and higher in protein and zinc.

Fresh rosemary: This herb adds a herby flavor to the ground bison meatballs. It is rich in antioxidants and anti-inflammatory compounds. 

Granulated onion: This spice enhances the flavor of the meatballs with its savory and sweet taste.

Granulated garlic: This spice adds more flavor to the meatballs. It also has antibacterial, antiviral, and antifungal properties. 

Fresh cracked pepper: This spice adds a little bit of heat to the meatballs. Pepper is a good source of vitamin C, potassium, and iron. 

Sea salt: Sea salt, an essential ingredient to every recipe, adds flavor and seasoning to the meatballs. Opt for sea salt for more balanced minerals and less sodium, healthier than table salt.

Almond flour: This flour is used to bind the meatballs together, and it is gluten-free. It is rich in protein, fiber, and healthy fats. Sift it to remove any lumps before using it. 

Egg: This ingredient is also used to bind the meatballs together and is high in protein.

Why use Bison over Beef

For those with food sensitivities to beef, bison is a good alternative.

It’s also more likely to be grass-fed and pasture-raised versus commercially raised, grain-fed cattle. Therefore, bison can be a more sustainable option for the environment, depending on your beef provider.

How to make Bison Meatballs

Preparing the Bison Meatball Mixture

Start by preheating the oven to 350 degrees. In a big bowl, mix fresh rosemary, granulated onion, garlic, black pepper and salt. Add ground bison and mix well.

Shaping and Searing the Meatballs

Add almond flour and an egg and mix gently. Don’t mix too much or the meatballs will be hard. Shape the meatballs with your hands, about the size of a golf ball.

Heat olive oil in a large oven-safe pan over medium-high heat. Sear meatballs in the pan, leaving some space between them. Cook until they are brown on both sides.

Adding the Marinara Sauce and Finishing in the Oven

Pour marinara sauce over the meatballs and put the pan in the oven. Bake for 8-10 minutes until the meatballs are done.

Finally, enjoy your meatballs with spaghetti squash, pasta or your favorite roasted vegetables like broccoli or potatoes.

Ingredients

  • 1 tablespoons fresh rosemary
  • 1 teaspoon granulated onion
  • 1 teaspoon granulated garlic
  • 1 teaspoon fresh crashed pepper
  • 3/4 teaspoon sea salt
  • 1 lb ground bison
  • 1/3 cup sifted almond flour
  • 1 egg
  • 1 tablespoon extra virgin olive oil
  • 24 oz marinara sauce

Instructions

  1. Heat the oven to 350 degrees.
  2. In a large mixing bowl, combine the fresh rosemary, granulated onion, garlic, black pepper and salt and stir to mix it together. Add in the ground bison and mix to combine.
  3. Add in the almond flour and egg and gently mix until just combined. Do not overmix or the meatballs will be tough.
  4. Use your hands to shape the mixture into meatballs, about 3 tablespoons each, or a bit larger than a golf ball.
  5. Place a large oven safe saute pan over medium high heat. Add the meatballs to the pan keeping them 2 inches apart. Sear the meatballs until browned on one side, about 3-5 minutes, then flip to sear the other side for another 3-5 minutes.
  6. Once the meatballs are browned pour the marinara sauce over the meatballs and put the pan in the oven, cooking for 8-10 minutes to cook through.
  7. Serve the meatballs over spaghetti squash, pasta or alongside vegetables your favorite roast vegetables like broccoli or potatoes.

Notes

  • For the meat, you can choose bison, beef, or lamb.
  • To make it gluten-free, swap breadcrumbs with almond flour.
  • You can opt for fresh garlic or onions instead of the granulated ones.
  • If you lack dried rosemary, fresh thyme can work as a substitute herb.
  • Spinach or any other green that you like can be added for extra flavor.
